Spring Pea and Mint Soup with a Drizzle of Extra Virgin Olive Oil

Ingredients:
2 cups of fresh or frozen peas
1 small onion, finely chopped
2 cups of vegetable stock
A handful of fresh mint leaves
Salt and pepper, to taste
A generous drizzle of Farmhouse Butter Olive Oil
Optional: crème fraîche, for serving

Instructions:
In a saucepan over medium heat, sauté the onion
in a splash of olive oil until translucent. Add the
peas and vegetable stock, bringing the mixture to
a simmer. Let it cook for about 10 minutes, or until
the peas are tender. Remove from heat and add the
fresh mint leaves, reserving a few for garnish. Blend the
soup until smooth using a hand blender or a countertop
blender. Season with salt and pepper to taste. Serve warm
with a dollop of crème fraîche (if using) and a generous drizzle of Farmhouse Butter Olive Oil. Garnish with the reserved mint leaves.
