Balsamic Glazed Veggie Skillet

Ingredients:
Olive Oil – 2 tbsp
Balsamic Vinegar – 2 tbsp
Zucchini – 2, sliced
Cherry Tomatoes – 1 cup, halved
Red Onion – 1, thinly sliced
Garlic – 2 cloves, minced
Fresh Basil – A handful, roughly chopped

Instructions:
Heat the olive oil in a large skillet over medium heat.
Add the sliced red onion and cook until softened, about 3-4 minutes.
Toss in the zucchini and garlic, cooking until the zucchini is tender but still crisp, about 5 minutes.
Stir in the cherry tomatoes and cook for another 2 minutes until they just start to soften.
Pour in the balsamic vinegar and let it simmer for 1-2 minutes, allowing it to reduce slightly and coat the vegetables.
Remove from heat and sprinkle with fresh basil before serving.
