Ingredients:
2/3 of a cup of prepared quinoa
3/4 of a cup of rinsed canned black beans
1/4 of a cup of hummus
2 tbsp Farmhouse Harissa Olive Oil
1 tbsp of lime juice
3 tbsp of pico de gallo
1/4 of a medium avocado, chopped
2 tbsp of freshly chopped cilantro
Instructions:
Mix the black beans and quinoa in a dish. In a separate small bowl, blend hummus and Farmhouse Harissa Olive Oil with lime juice; dilute with water until it reaches the preferred thickness. Spoon this hummus sauce over the quinoa and beans mixture. Garnish with diced avocado, pico de gallo, and fresh cilantro.
