Ingredients:
Chicken breasts (4 pieces, boneless and skinless) – symbolizing the 4 years between each leap year.
Farmhouse Garlic Cilantro Balsamic vinegar (1/2 cup) – for a glossy, tangy glaze that adds a leap of flavor.
Farmhouse Rosemary Olive Oil (2 tablespoons) – to sear the chicken, adding a smooth, fruity backdrop.
Honey (1 tablespoon) – for a touch of sweetness, balancing the acidity of the vinegar.
Garlic (2 cloves, minced) – for a punch of flavor, making the dish more memorable.
Rosemary (1 tablespoon, fresh and chopped) – for a fragrant, earthy note, echoing the leap year’s extra day’s growth and potential. Salt and pepper (to taste) – to enhance all the flavors and bring the dish together.
Instructions:
Season the Chicken: Sprinkle salt and pepper on both sides of the chicken breasts.
Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown on both sides, about 3-4 minutes per side. Remove the chicken and set aside.
Make the Glaze: In the same skillet, add the balsamic vinegar, honey, garlic, and rosemary. Stir well, scraping up any browned bits from the chicken. Bring to a simmer and cook until the sauce thickens, about 5 minutes.
Combine: Return the chicken to the skillet, spooning the glaze over the top. Cook for another 5-7 minutes, or until the chicken is cooked through and the glaze is glossy and thick.
Serve: Plate the chicken and drizzle with the remaining glaze from the pan.
